Adapted from Bobby Flay's delicious dish that features fresh grilled corn, creme fraiche, cojita cheese and cilantro, I created this version with ingredients I had on hand in my kitchen. It's amazing!MORE+LESS-
lemon, juiced and zested
tablespoon chili powder
tablespoons fresh basil leaves, finely chopped
cup grated Italian cheese (parmesan or a blend)
Freshly ground pepper and salt to taste
In large skillet, heat oil. Add frozen corn kernels and cook, stirring constantly, until heated through.
Add remaining ingredients, Mix thoroughly. Serve immediately!
